Art of Drink

Founded 2005 by Darcy S. O’Neil — a Canadian research chemist turned bartender who brought laboratory methodology to beverage development. Art of Drink is the primary methodology source for the Flavor Lab.

Philosophy

O’Neil advocates for scientific rigor in drink-making: consistency, reproducibility, rigorous documentation, and proper methodology. He critiques pseudo-scientific bartending trends and promotes “buzz management” — creating complex low/no-alcohol beverages with aromatic compounds and esoteric ingredients as alternatives to standard mixers. His work democratizes flavor and beverage development knowledge that was previously limited to corporate laboratories.

Relationship to the H&H project

Art of Drink is the methodology backbone of the Flavor Lab, and the connection to H&H runs deeper than technique:

Soda fountain history ↔ H&H’s era

Fix the Pumps documents the golden age of American soda fountains (1800s–early 1900s) — the same era in which H&H was founding and growing. The pharmaceutical origins of soda fountain culture (pharmacist-chemists making flavored carbonated drinks from extracts and essences) parallel H&H’s own extract-production practice. O’Neil’s revived Acid Phosphate is a product from this exact tradition.

Extract production methods

O’Neil’s percolation extraction method (the core technique for the Belfast Ginger Ale extract and other formulations) is the same pharmaceutical-grade technique H&H’s Spice and Extract Department would have used for their 33+ essences and extracts. The equipment is modernized but the chemistry is identical.

NA beverages and “buzz management”

O’Neil’s advocacy for complex non-alcoholic beverages aligns directly with the project’s beverages and flavor design direction — especially the ginger beer and ghost pepper ginger beer products, which are rooted in his Belfast Ginger Ale formulation methodology.

Ingredient overlap with H&H

The Flavor Lab’s ingredient inventory (vanilla, Ceylon cinnamon, nutmeg, ginger, orange peel, capsicum) maps directly to H&H’s documented spice and extract line. O’Neil’s formulations use these ingredients in the same tradition — botanical extraction for beverage flavoring.
