A full-page grand-opening ad for Big John’s Sizzling Steaks (owner-operator Big John Hamilton, located at the corner of Harry Wurzbach Rd. and the 1400 block of Austin Hwy., “one block north of Famous Sevenoaks Country Club, formerly N.E. Military Dr.”), opening Tuesday, 21 December 1954. The ad’s design — a tall lanky cowboy mascot, a $2.10 “Big John’s Famous Sizzling Steak” with French fries and lettuce, and a 65¢ weekday lunch with iced tea or coffee — and the prominent “OUR POLICIES AND METHODS ARE PATTERNED AFTER HILL’S OF AUSTIN” disclosure positions the new venue as a satellite of the Austin steakhouse tradition (Mr. Hill of Austin and his head chef were on hand to supervise the opening). For our purposes, the salient detail sits in the lower-left credit panel: “H&H COFFEE CO., 601 Delaware St.” is listed alongside Industrial Refrigeration & Air Conditioning Co., Metzger’s Dairy, Select Meat Co., and Music — Beautiful New A.M.I. as the new restaurant’s launch suppliers. This is a 1954 hotel-cafe-channel attestation: H&H was supplying San Antonio restaurants directly, named in the opening-day vendor list, four years before the 1958 H&H Master Chef “Big D in flavor” foodservice ads and well before the formal 1962 Continental acquisition.
